Recipes:

Strawberry Daiquiri:

  • 4 oz's frozen strawberries
  • 1/2 cup white sugar
  • 1/2 cup lemon juice
  • 1/8 cup lime juice
  • 3/4 cup rum
  • 1/4 cup lemon-lime soda
  • 6 cups ice, or as needed

Instructions:

1. Place frozen strawberries in a blender, add sugar, lemon juice, and lime juice.

2. Pour in rum and lemon-lime soda, then add ice.

3. Blend until smooth.

4. Pour strawberry daiquiri mixture into hurricane glasses. Enjoy!

Strawberry Gin & Tonic:

  • 1 to 2 Tbsps fresh strawberry puree
  • 2 oz's fresh strawberry syrup (chilled)
  • 2 oz's Gin (chilled)
  • 2 oz's Tonic water (chilled)
  • 1 lime wedge
  • 1 strawberry halved
  • 1 sprig fresh thyme

Instructions:

1. Fill a 12 oz glass half full with ice.

2. Add strawberry puree (simply mash a couple strawberries with a fork until you have a very loose mixture), strawberry syrup, gin and tonic water. Then squeeze a lime wedge over the top.

3. Give a gentle stir to combine. Taste test, adding more strawberry syrup if desired. Add the lime wedge to the cocktail, along with the strawberry halves and thyme. Enjoy!

NOTES: STRAWBERRY SYRUP RECIPE: In a medium saucepan over medium-high heat. Combine 2 pounds sweet strawberries (stems removed, halved), 2 cups water, and 1 cup sugar. Bring to a boil. Turn heat down a bit and let cook for 10-15 mins, or until strawberries are soft and light pink in colour. Remove from heat and let cool. Place a fine mesh strainer lined with a double layer of cheesecloth over a bowl. Pour strawberry mixture through cheesecloth, allowing juices to drain into bowl. Gather up sides of cheesecloth and gently press on cheesecloth to squeeze out all the delicious strawberry syrup. Discard cheesecloth mixture. Stir 1 Tbsp fresh lemon juice into strawberry syrup. Place in covered container and store in refrigerator. Keeps well for a few weeks. Mix into cocktails, lemonade, and club soda.

Note: The amount of strawberry syrup yu'll use will depend on the sweetness of your strawberries and your own personal preference for sweetness.

Strawberry Mimosa/Bellini: 2 Servings

  • 8 oz strawberries (8oz's gives approx 2/3 cup puree)
  • 2 tsps. sugar
  • 6 fl oz. Prosecco (approx)

Instructions:

1. Blend the strawberries until smooth then strain through a very fine sieve or cheesecloth to get as many of the seeds out as possible. Add the sugar, half at a time, tasting to see if it's roughly the sweetness you'd want then add more as needed.

2. Divde the strawberry puree between two glasses, filling up to a little under halfway. Top the glasses with Prosecco, a little at a time as it will bubble up a lot. Gently stir to mix and serve.

Note: You can make the puree ahead of time and refrigerate a few hours.

Frozen Strawberry Margarita: 2 Servings

  • 2 cups frozen strawberries
  • 1/2 cup Tequila (approx 4 oz's)
  • 1/4 cup lime juice, freshly squeezed (approx 2 oz's)
  • 2-3 Tbsps Simple Syrup (adjust to taste)
  • 1/4 cup Grand Marnier
  • 1 cup ice cubes (if needed for extra thickness)
  • Sugar Rimmer
  • lime slices for garnish

Instructions:

1. Prepare the Glass: Rub a lime wedge around the rim of your glasses and dip them into a small plate of sugar rimmer or margarita salt rimmer.

2. Blend: Add the frozen strawberries, tequila, lime juice, Grand Marnier, and simple syrup into a high speed blender.

3. Process: Blend on high until completely smooth and thick. If the mixture is too thin, add a few ice cubes and blend again.

4. Serve: Pour immediately into the prepared glasses and garnish with fresh strawberry or lime wedge.

Strawberry Mojito: 4 Servings

  • 1 large lime (quartered)
  • 1/4 bunch mint leaves
  • 3 1/2 strawberries (quartered)
  • 1/2 cup white sugar
  • 1 cup club soda
  • 1/2 cup white rum
  • 4 cups ice cubes

Instructions:

Step 1. Add sugar rimmer to a shallow plate. Run a lime wedge around the rims of 4 cocktail glasses, then dip the rims into sugar to coat, set aside.

Step 2. Squeeze all the lime wedges into a sturdy glass pitcher. Toss juiced limes into the pitcher along with mint, strawberries, and 1 cup sugar. Crush with a muddler to release strawberry juice and mint oil. Stir in club soda and rum until sugar has dissolved.

Step 3. Pour into the prepared glasses over ice cubes to serve.

Strawberry Lemonade: 8 Servings

  • 6 cups water (divided)
  • 1 cup + 1 Tbsp white sugar
  • 1 cup lemon juice - seeds removed
  • 1 1/2 cups ripe strawberries (quartered)
  • Additional quartered strawberries and sliced lemons for garnish (optional)

Instructions:

Simple Syrup Recipe:

1. Prepare simple syrup first by combining 1 cup water and 1 cup sugar in a small saucepan. Place over medium-low heat and stir frequently until sugar is dissolved, set aside.

2. Combine strawberries, 1/2 cup water and 1 Tbsp sugar in blender and blend until strawberries are completely pureed.

3. Pour strawberry puree through a fine mesh sieve into pitcher and use a spatula to press/work as much strawberry juice through as possible. Discard remaining pulp/seeds.

4. Add lemon juice and simple syrup to pitcher.

5. Add remaining 4 1/2 cups water and stir well. If desired add additional quartered strawberries and slices lemons to pitcher for added flavour and decoration.

6. Pour lemonade over ice and serve or chill and then stir again before serving.

Notes: Fresh squeezed preferred, but bottled lemon juice will also work.

Strawberry Mojito Moacktail: 4 Servings

  • 12-14 strawberries, stems removed
  • 8 large mint leaves - if they are on the small size add 12 mint leaves
  • 2 1/2 cups Sprite
  • 1/8 cup Fresh lime juice
  • Garnish: Mint leaves/lime slices

Instructions:

1. Add strawberries and mint leaves to a pitcher. Using a muddle (or a wooden spoon), muddle the strawberries and mint leaves. You're basically crushing them strawberries and mint leaves to extract the juices. Be careful as you don'twant to tear the mint leaves to pieces.

2. Add the lime juice and Sprite to the pitcher. Stir.

3. Fill glasses with crushed ice (optional). Pour the virgin mojito mixture over the ice. Garnish with extra mint and lime slices. Serve immediately.
