Pumpkin Chocolate Chip Muffin Mix

Additional Ingredients: 1 Cup Canned Pumpkin, 3/4 Cup Milk, 6 Tbsps. Butter (melted), 2 Eggs.

Baking Instructions: Heat oven @ 400F. Grease or line 18 regular size muffin cups. Pour contents of pkg into large bowl. Combine pumpkin, milk, butter and eggs in a small bowl until blended, stir into pkg mixture just until moistened. Spoon evenly into prepared muffin cups filling 2/3 full. Bake 15-17 minutes or until toothpick inserted into center comes out clean. Cool in pans on wire racks 10 minutes remove from pan and let cool completely.

Additional Ingredients: 1/2 Cup Vegetable Oil, 1 1/4 Cups Milk, 2 Eggs, 2 Tsps. Vanilla.

Baking Instructions: Preheat oven @ 350F. In a large bowl, mix together the pkg contents with eggs, milk, vegetable oil and vanilla. Mix well. Pour into muffin liners and bake for 18-22 minutes.

Additional Ingredients: 2 Eggs, 4 oz. melted Butter, 1 Cup Milk or Buttermilk, 1 tsp. Vanilla.

Baking Instructions: Preheat oven @ 375F. Whisk together the eggs, butter, milk or buttermilk, and vanilla. With wooden spoon, stir in the blueberry muffin mix just until ingredients are moistened. Spoon batter into greased muffin pans, filling each muffin cup about 3/4 full. If desired, sprinkle tops with sugar or cinnamon sugar. Bake for about 25 minutes.

Baking Instructions: Preheat oven @350F. Empty the pkg into a large bowl and mix well. In a small bowl whisk together egg, melted butter, and vanilla. add the wet ingredients to dry ingredients and stir until combined. Bake for 8-10 minutes or until edges are very light brown. The middles will appear underdone. Cool on cookie sheet for 5 minutes. Transfer cookies to a wire rack to cool completely.

Form the dough into 2" balls and set on a lined cookie sheet 2" apart. Bake for 12-14 minutes, until the tops of cookies begin to brown. Allow to cool completely on a wire rack.

Lemon Poppy Seed Cream Cake/ Muffin Mix

Additional Ingredients: 2 Large Eggs, 1/2 Cup Vegetable Oil, 1/3 Cup Water.

Baking Instructions: Preheat oven; 8" round cake - 320F, Muffins and loaves 370F. Use a paddle, not a whisk if possible. Place Lemon poppy seed mix into a mixing bowl. Add all liquid slowly while at low speed, mix 2 minutes on low speed. Scrape down bowl. Mix 3 minutes on medium speed. Mix 1 minute on low speed. 

Muffins: add mix to lined muffin pans, bake for 25-30 minutes. Loaves add mix to sprayed loaf pan, bake for 40-45 minutes. Cake add mix to sprayed 8" cake pan, bake for 30 minutes.
